These Zesty Grilled Oysters are a delightful seafood treat that combines the briny freshness of oysters with a tangy and herbaceous lemon butter sauce. Grilled to perfection, these oysters are a perfect appetizer for any occasion.

Oysters:

  • 12 fresh oysters, scrubbed clean and kept on the half shell

Lemon Butter Sauce:

  • 6 tbsp unsalted butter
  • 2 garlic cloves, finely minced
  • 2 tbsp fresh lemon juice
  • 1 tsp lemon zest
  • 1 tbsp chopped fresh parsley
  • 1/4 tsp sea salt
  • 1/8 tsp freshly ground black pepper

Additional:

  • Lemon wedges
  • Extra chopped parsley

Instructions

  1. Preheat Grill: Preheat a grill to high heat (about 500°F / 260°C).
  2. Prepare Lemon Butter Sauce: In a small saucepan over low heat, melt the butter. Add garlic and cook for 1 minute until fragrant. Stir in lemon juice, zest, parsley, salt, and pepper. Remove from heat.
  3. Grill Oysters: Place the oysters on the grill, flat-side up to retain their juices. Grill with the lid down for 2–3 minutes, just until the oysters start to curl at the edges.
  4. Add Lemon Butter Sauce: Spoon about 1 tsp of the lemon butter sauce onto each oyster. Close the grill lid and cook for another 1–2 minutes, until the butter sizzles and the oysters are just set.
  5. Serve Oysters: Carefully remove from grill using tongs. Serve immediately with lemon wedges and a sprinkle of parsley, if desired.
