Whipped Feta Base
- 8 oz block feta cheese
- 4 oz cream cheese, softened
- 2 tbsp olive oil
- 1–2 tbsp lemon juice
- 1 small garlic clove (optional)
Toppings
- 3 tbsp honey, warmed
- 1/4 cup pistachios, shelled and chopped
- 1/4 cup dried cranberries
- 1/4 tsp black pepper (optional)
- Pinch of chili flakes or za’atar (optional)
To Serve
- Crusty bread, pita, or crackers
- Prepare Whipped Feta Base: Combine the feta cheese, softened cream cheese, olive oil, lemon juice, and optional garlic clove in a food processor.
- Blend Until Smooth: Blend the mixture until it is smooth and fluffy, stopping occasionally to scrape down the sides to ensure even mixing.
- Toast Pistachios: In a dry skillet over medium heat, toast the chopped pistachios for about 3–4 minutes or until fragrant, stirring frequently to avoid burning.
- Warm Honey: Slightly warm the honey to make it easier to drizzle over the dip without hardening.
- Assemble the Dip: Spread the whipped feta mixture evenly onto a serving plate or bowl.
- Add Toppings: Drizzle the warmed honey over the whipped feta, then sprinkle the toasted pistachios, dried cranberries, and optional seasonings like black pepper, chili flakes, or za’atar on top.
- Serve: Serve immediately alongside crusty bread, pita, or crackers for dipping.
Notes
- For a more pronounced garlic flavor, finely mince the garlic before adding or omit if preferred.
- Adjust lemon juice to taste for your preferred level of tanginess.
- To keep the pistachios fresh and crunchy, toast them just before serving.
- This dip is best enjoyed fresh but can be stored in an airtight container in the refrigerator for up to 2 days.
- Allow cream cheese to soften at room temperature for easier blending.
