Mixed Nuts

  • 16 oz (about 3 cups) mixed nuts (3 oz cashews, 3 oz almonds, 3 oz pecans, 3 oz walnuts, 4 oz peanuts – omit peanuts for Paleo)

Coating & Spices

  • 1 large egg white
  • 170g (about 1/2 cup) honey
  • 1 1/2 tsp Kosher salt
  • 1 tsp ground cumin
  • 1 tsp ground cinnamon
  • 1/2 tsp chili powder
  • 1/2 tsp red pepper flakes
  • 1/2 tsp cayenne pepper (use 1/4 tsp for milder mix)
  • 1/4 tsp cracked black pepper
  • 1/4 tsp ground ginger
  • 1/4 tsp ground cloves

Instructions

  1. Preheat Oven: Preheat your oven to 250 degrees F (120 C). Line a large baking sheet with a silicone liner or parchment paper to prevent sticking and ensure easy cleanup.
  2. Whip Egg White and Coat Nuts: In a medium mixing bowl, whip the egg white until frothy. Add the mixed nuts and toss thoroughly to coat them evenly with the egg white, which helps the honey and spices adhere.
  3. Add Honey and Spices: Gently warm the honey for 10-15 seconds in the microwave if it is firm to liquify it. Add the honey along with all the spices and seasonings to the nuts. Mix well to ensure all nuts are evenly coated with the flavorful glaze.
  4. Roast Nuts: Spread the coated nut mixture evenly on the prepared baking sheet. Roast in the oven for 45-60 minutes, stirring every 15 minutes with a wooden spoon or spatula to ensure even toasting. The nuts should become lightly browned and glossy.
  5. Cool and Store: Remove the nuts from the oven and allow them to cool for at least 10 minutes. The nuts will harden and become crunchy as they cool. Break them into chunks and store in an airtight container in a cool, dry place for up to 2 weeks.

  • Omit peanuts if following a Paleo diet.
  • To reduce heat, use 1/4 tsp cayenne pepper instead of 1/2 tsp.
