Strawberry Base
- 1 1/2 cups fresh strawberries
- 1/4 cup pineapple juice
Coconut Pineapple Drink
- 1 cup fresh pineapple chunks
- 1/2 cup ice cubes
- 3/4 cup pineapple juice
- 3/4 cup coconut milk
- 1–2 tbsp brown sugar (optional)
- Prepare the strawberry base: Blend the fresh strawberries with the 1/4 cup pineapple juice until smooth and creamy. Pour the mixture into a separate jug and set aside.
- Make the coconut pineapple drink: Rinse the blender, then add the fresh pineapple chunks, ice cubes, 3/4 cup pineapple juice, coconut milk, and brown sugar if using. Blend until smooth and well combined.
- Assemble the drink: Pour the strawberry base into a tall glass until it fills about 25% of the glass. Slowly top with the coconut pineapple mixture to fill the rest of the glass. Swirl gently with a straw or skewer to create a beautiful gradient effect if desired.
- Garnish and serve: Garnish with a fresh pineapple wedge and a strawberry on the rim of the glass. Serve immediately and enjoy the refreshing tropical flavors.
