Sauce
- 1 cup heavy whipping cream
- 1/2 cup chicken broth
- 2 cloves garlic, minced
- 1 ½ teaspoons Italian seasoning
- 2/3 cup freshly grated Parmesan cheese
- 1/2 Tablespoon all-purpose flour
- 1 Tablespoon water
- 1/4 teaspoon black pepper
Pizzas
- 6 Flatbreads or Pita Breads (preferably Papa Pita brand)
- 2 cups cooked chicken, chopped (Costco Bare Life chicken nuggets recommended)
- 1 ½ cups sun-dried tomatoes
- 1 ½ cups baby spinach leaves, torn
- 2 cups shredded Mozzarella cheese
- Preheat the oven or air fryer: Set your oven or air fryer to 350°F to prepare for baking or air frying the pita pizzas.
- Make the creamy sauce: In a medium saucepan, combine heavy cream, chicken broth, minced garlic, Italian seasoning, Parmesan cheese, and black pepper. Stir well to mix all ingredients evenly.
- Thicken the sauce with slurry: In a small bowl, mix the flour and water to form a slurry. Pour this into the saucepan and whisk continuously over medium heat until the sauce thickens. Once thickened, remove from heat and cover to keep warm.
- Assemble the pita pizzas: Lay the pita breads flat. Spread 3 tablespoons of the prepared sauce evenly over each pita. Top each with 1/3 cup chopped chicken, 1/4 cup sun-dried tomatoes, and 1/4 cup torn baby spinach leaves. Finish by sprinkling 1/3 cup shredded mozzarella cheese over the top evenly.
- Cook the pizzas: For oven baking, place the assembled pita pizzas on greased baking sheets and bake for 10 to 12 minutes until the cheese melts. If using an air fryer, place one pita pizza on the tray and cook for 5 to 6 minutes until cheese melts. Serve the pizzas warm, optionally with remaining sauce for dipping. Enjoy!
Notes
- You can use any cooked chicken if not using chicken nuggets, shredded or diced works well.
- If you don’t have fresh Parmesan, pre-grated cheese will work but fresh is best for flavor.
- Adjust Italian seasoning levels to your taste preference.
- This recipe works well with store-bought pita or flatbreads, but fresh is best for texture.
- Leftover sauce can be refrigerated and used as a dip or for other dishes.
