These Ultimate Turkey Dijon Melt Sandwiches combine thick-cut deli turkey, melted Monterey Jack cheese, tangy honey Dijon mustard, and a hint of red onion on your choice of sandwich bread. Ingredients

Scale

For the Sandwiches:

  • 8 slices sandwich bread (white, wheat, or sourdough)
  • 4 tablespoons mayonnaise
  • 8 ounces sliced turkey (deli or leftover roasted turkey)
  • 6 ounces Monterey Jack cheese, sliced
  • 1/2 medium red onion, thinly sliced
  • Salt and freshly ground black pepper to taste
  • 3 tablespoons honey Dijon mustard
  • 4 tablespoons butter, softened

Instructions

  1. Prepare the Bread: Lay out all 8 slices of bread on a clean work surface. Spread mayonnaise evenly on one side of 4 slices – this will be the inside of your sandwiches. On the other 4 slices, spread honey Dijon mustard on one side.
  2. Build the Sandwiches: On the mayo-spread slices, layer the turkey evenly, followed by the thinly sliced red onion. Season lightly with salt and pepper. Add the Monterey Jack cheese slices, ensuring they cover the turkey completely. Top with the mustard-spread bread slices, mustard side down.
  3. Butter the Outside: Spread softened butter evenly on the outside of each sandwich (the sides that will touch the pan). This ensures a golden, crispy exterior when cooked.
  4. Cook the Sandwiches: Heat a large skillet or griddle over medium heat. Place the sandwiches in the pan and cook for 3-4 minutes until the bottom is golden brown. Carefully flip and cook another 3-4 minutes until the second side is golden and the cheese is fully melted.
  5. Serve: Remove the sandwiches from heat and let cool for 1 minute before slicing diagonally. Serve immediately while the cheese is melty and the bread is crispy.

Notes

  • For best results, use thick-cut deli turkey and quality Monterey Jack cheese.
  • Adjust the amount of Dijon mustard to taste if you prefer a stronger or milder tanginess.
  • Butter the sandwich generously on the outside for a perfectly crispy crust.
  • You can substitute red onion with caramelized onions for a sweeter flavor.
  • Serve with a side of pickles or a simple green salad for a complete meal.
