Chicken:

  • lbs boneless, skinless chicken breasts, diced into small pieces

Vegetables:

  • 2 tablespoons sesame oil, divided
  • ⅔ cup shredded carrots
  • 1 garlic clove, minced
  • 1 cup green onions, sliced
  • 1 large red bell pepper, seeded and diced
  • 1 (8 oz) can sliced water chestnuts, drained and chopped

Additional:

  • ⅔ cup cashews or peanuts, roughly chopped
  • 1 cup teriyaki sauce, divided
  • Romaine, iceberg, or butter lettuce leaves
  • 2 tablespoons sesame seeds for garnish

Instructions

  1. Cook Chicken: In a large skillet, heat 1 tablespoon of sesame oil over medium-high heat. Add the diced chicken and cook for 3–5 minutes until fully cooked. Remove from skillet.
  2. Sauté Vegetables: In the same skillet, heat remaining sesame oil. Sauté garlic and green onions. Add bell pepper, water chestnuts, and cook.
  3. Add Sauce: Stir in ⅔ cup teriyaki sauce. Cook for 1 minute.
  4. Combine: Return chicken and carrots to skillet. Heat through.
  5. Assemble: Serve chicken mixture on lettuce leaves. Garnish with nuts, green onions, sesame seeds, and drizzle with remaining teriyaki sauce.
