Chicken:
- 1½ lbs boneless, skinless chicken breasts, diced into small pieces
Vegetables:
- 2 tablespoons sesame oil, divided
- ⅔ cup shredded carrots
- 1 garlic clove, minced
- 1 cup green onions, sliced
- 1 large red bell pepper, seeded and diced
- 1 (8 oz) can sliced water chestnuts, drained and chopped
Additional:
- ⅔ cup cashews or peanuts, roughly chopped
- 1 cup teriyaki sauce, divided
- Romaine, iceberg, or butter lettuce leaves
- 2 tablespoons sesame seeds for garnish
- Cook Chicken: In a large skillet, heat 1 tablespoon of sesame oil over medium-high heat. Add the diced chicken and cook for 3–5 minutes until fully cooked. Remove from skillet.
- Sauté Vegetables: In the same skillet, heat remaining sesame oil. Sauté garlic and green onions. Add bell pepper, water chestnuts, and cook.
- Add Sauce: Stir in ⅔ cup teriyaki sauce. Cook for 1 minute.
- Combine: Return chicken and carrots to skillet. Heat through.
- Assemble: Serve chicken mixture on lettuce leaves. Garnish with nuts, green onions, sesame seeds, and drizzle with remaining teriyaki sauce.
