Ingredients

Scale

Chicken and Sauce

  • 2 cooked chicken breasts (grilled, baked, or shredded rotisserie)
  • ½ cup sweet chili sauce
  • Olive oil
  • Salt & pepper, to taste

Vegetables

  • 1 cup shredded lettuce
  • 1 cucumber, sliced thin
  • 1 bell pepper, sliced
  • 1 carrot, julienned

Wrap Components

  • 4 large tortillas (flour or whole wheat)

Optional Add-Ins

  • Shredded cheese
  • Avocado slices
  • Fresh herbs (cilantro, mint, or basil)
  • A squeeze of lime

Instructions

  1. Cook the Chicken: Season the chicken breasts lightly with salt and pepper. Heat olive oil in a skillet over medium heat and cook the chicken until golden brown and fully cooked, reaching an internal temperature of 165°F. Remove from heat and let rest for 5 minutes.
  2. Slice the Chicken: After resting, slice the chicken thinly against the grain to ensure tenderness.
  3. Toss with Sweet Chili Sauce: Place the sliced chicken in a bowl and toss with ½ cup of sweet chili sauce until the chicken is evenly coated.
  4. Prepare Vegetables: Slice the cucumber and bell pepper into thin strips and julienne the carrot. Shred the lettuce.
  5. Warm the Tortillas: Heat the tortillas either in a dry pan over medium heat or microwave them for 10 to 15 seconds until warm and pliable.
  6. Assemble the Wraps: Lay a warmed tortilla flat. Add a layer of shredded lettuce, then place the sweet chili chicken on top. Add the sliced cucumber, bell pepper, and carrot. Include optional shredded cheese, avocado slices, fresh herbs, and a squeeze of lime if desired.
  7. Roll and Cut: Fold the sides of the tortilla inwards and roll it tightly from one end to the other. Cut each wrap diagonally in half for serving.

Notes

  • You can use pre-cooked rotisserie chicken to save time.
  • Adjust the amount of sweet chili sauce according to your preferred spice and sweetness level.
  • For a gluten-free option, use gluten-free tortillas.
  • Add a squeeze of lime to brighten the flavors before rolling the wrap.
  • These wraps are best enjoyed fresh but can be wrapped tightly and refrigerated for up to 24 hours.
