- Cook the Chicken: Season the chicken breasts lightly with salt and pepper. Heat olive oil in a skillet over medium heat and cook the chicken until golden brown and fully cooked, reaching an internal temperature of 165°F. Remove from heat and let rest for 5 minutes.
- Slice the Chicken: After resting, slice the chicken thinly against the grain to ensure tenderness.
- Toss with Sweet Chili Sauce: Place the sliced chicken in a bowl and toss with ½ cup of sweet chili sauce until the chicken is evenly coated.
- Prepare Vegetables: Slice the cucumber and bell pepper into thin strips and julienne the carrot. Shred the lettuce.
- Warm the Tortillas: Heat the tortillas either in a dry pan over medium heat or microwave them for 10 to 15 seconds until warm and pliable.
- Assemble the Wraps: Lay a warmed tortilla flat. Add a layer of shredded lettuce, then place the sweet chili chicken on top. Add the sliced cucumber, bell pepper, and carrot. Include optional shredded cheese, avocado slices, fresh herbs, and a squeeze of lime if desired.
- Roll and Cut: Fold the sides of the tortilla inwards and roll it tightly from one end to the other. Cut each wrap diagonally in half for serving.
