Garlic Herb Compound Butter:

  • 4 ounces (1 stick) unsalted butter, softened
  • 46 garlic cloves, pushed through a garlic press or grated on a zester
  • 1 tablespoon fresh chives, thinly sliced
  • 1 tablespoon fresh Italian parsley leaves, finely chopped
  • 1 tablespoon fresh rosemary leaves, finely chopped
  • 1 tablespoon fresh thyme leaves, finely chopped
  • kosher salt, to taste
  • 3/4 teaspoon freshly cracked black pepper

Instructions

  1. Whip the Butter: Place the butter in the bowl of a stand mixer fitted with the paddle attachment. Whip the butter to soften.
  2. Add Ingredients: Add the garlic, chives, parsley, rosemary, thyme, salt, and pepper. Blend thoroughly, scraping the bowl as needed.
  3. Adjust Seasoning: Taste for seasoning and adjust salt, pepper, or herbs as desired.
  4. Shape the Butter: Lay out a piece of plastic wrap, then form the butter into a log shape on it.
  5. Wrap and Refrigerate: Roll the butter in the plastic wrap, refrigerate for at least an hour before using.
