Sandwich Ingredients:

  • 2 slices good sourdough/crusty bread
  • 1/2 ball of fresh mozzarella
  • 1 handful of grated cheddar/mozzarella/gruyere
  • 2 tbsp fresh basil pesto
  • 3 slices of prosciutto
  • 45 basil leaves, to top
  • Butter

Instructions

  1. Prep the Sandwich: Heat a pan over low-medium heat. Spread butter on one side of the first bread slice. Place the slice butter-side down and layer with mozzarella, prosciutto, fresh mozzarella, basil leaves, and pesto. Season with salt and pepper. Top with the second bread slice, buttered on top.
  2. Cook the Sandwich: Fry the sandwich in the pan for about 5 minutes on each side until it is crunchy outside and the cheese is melted inside.
