Ingredients

Scale

Bread Ingredients

  • 2 cups (260 g) all-purpose flour
  • 1 tsp (6 g) baking soda
  • ½ tsp (3 g) baking powder
  • ½ tsp (3 g) salt
  • 1 ½ tsp (4.5 g) ground cinnamon
  • ½ tsp (1.5 g) ground allspice
  • ½ tsp (1.5 g) ground nutmeg
  • ¾ cup (150 g) granulated sugar
  • ½ cup (125 ml) vegetable oil
  • 2 large eggs
  • ¾ cup (210 g) apple butter
  • ½ cup (125 ml) buttermilk

Cream Cheese Frosting

  • ½ stick (56 g) butter, softened
  • ¾ cup (100 g) icing sugar
  • 4 oz (113 g) cold cream cheese
  • 3 tbsp (52 g) apple butter
  • Extra apple butter, for garnish

Instructions

  1. Mix Dry Ingredients: In a mixing bowl, combine the flour, baking soda, baking powder, salt, cinnamon, allspice, and nutmeg. Whisk together thoroughly and set aside.
  2. Combine Wet Ingredients: In a separate bowl, whisk together the granulated sugar, vegetable oil, and eggs until well combined. Incorporate the apple butter and buttermilk, whisking until the mixture is smooth.
  3. Combine Wet and Dry: Add the dry ingredients to the wet ingredients and gently whisk just until combined, taking care not to overmix to ensure a tender loaf.
  4. Prepare Pan and Pour Batter: Spray a 9x5x2.75-inch loaf pan with non-stick spray. Pour the batter into the pan, smoothing the surface evenly.
  5. Bake: Preheat the oven to 350°F (175°C). Bake the loaf for 50 to 60 minutes until a toothpick inserted into the center comes out clean and the top springs back when lightly touched.
  6. Cool: Remove the loaf pan from the oven and let it cool on a wire rack for 5 to 10 minutes. Run a knife around the edges to loosen, then tip the loaf out onto the rack to cool completely before frosting.
  7. Make Cream Cheese Frosting: In a mixing bowl, beat together softened butter and icing sugar using an electric mixer. It will look crumbly at first; continue beating until it resembles crumbs. Add cold cream cheese cut into cubes, beating until thick and creamy.
  8. Add Apple Butter to Frosting: Mix in 3 tablespoons of apple butter until fully incorporated and smooth.
  9. Frost the Loaf: Spread the cream cheese frosting evenly over the cooled loaf. Spoon extra apple butter on top and swirl gently into the frosting for decoration.
  10. Storage: Refrigerate the frosted loaf if keeping it overnight to maintain freshness.

Notes

  • Do not overmix the batter to keep the loaf tender and moist.
  • Make sure the cream cheese is cold for the best frosting texture.
  • The loaf pan size specified is 9x5x2.75 inches for proper baking time and texture.
  • Use apple butter with no added chunks for a smooth batter and frosting.
  • Store the finished loaf in the refrigerator if not consuming within a day to keep the frosting fresh.
