  • 1 cup yellow cornmeal

Wet Ingredients:

  • 8 tablespoons unsalted butter, melted
  • 2 tablespoons canola oil
  • 1 large egg, room temperature
  • ⅓ cup light brown sugar, lightly packed
  • 3 tablespoons honey
  • 1 cup buttermilk, room temperature
  • 1 tablespoon unsalted butter

Honey Butter:

  • 8 tablespoons salted butter, softened
  • 2 tablespoons honey
  • ½ teaspoon cinnamon

Instructions

  1. Preheat oven and skillet: Preheat oven to 400°F with an 8” or 9” cast iron skillet inside.
  2. Mix wet ingredients: In a medium bowl, whisk together melted butter, oil, egg, brown sugar, and honey until combined.
  3. Combine dry ingredients: Sift cornmeal, flour, baking powder, and salt together.
  4. Blend batter: Add flour mixture and buttermilk to wet ingredients, folding gently until just combined.
  5. Bake: Pour batter into hot skillet, bake for 18-22 minutes until cooked through.
  6. Make honey butter: Mix softened butter, honey, and cinnamon in a bowl until well combined.
  7. Serve: Let cornbread cool slightly, slice, and serve with honey butter.

Notes

  • If you don’t have buttermilk, you can make a substitute by adding 1 tablespoon of vinegar or lemon juice to 1 cup of milk and letting it sit for 5-10 minutes.
