This easy recipe features a wheel of Brie topped with a flavorful mixture of olive oil, garlic, fresh thyme, rosemary, salt, and pepper, baked until soft and melty. Ingredients

Scale

Cheese

  • 1 wheel Brie cheese (8 oz)

Herb and Garlic Topping

  • 2 tablespoons olive oil
  • 3 garlic cloves, minced
  • 1 tablespoon fresh thyme or 1 teaspoon dried thyme
  • 1 tablespoon fresh rosemary or 1 teaspoon dried rosemary
  • Salt, to taste
  • Black pepper, to taste

Garnish and Serving

  • Fresh parsley, chopped, for garnish
  • 1 tablespoon honey, optional
  • Crackers or baguette slices, for serving

Instructions

  1. Preheat Oven: Set the oven to 350°F (175°C) and allow it to fully preheat to ensure even baking.
  2. Prepare Cheese: Place the Brie wheel onto a baking dish or a parchment-lined baking sheet. Optionally, trim the rind lightly from the edges to make scooping easier once baked.
  3. Combine Garlic and Herbs: In a small bowl, stir together the olive oil, minced garlic, fresh or dried thyme, rosemary, and a pinch of salt and black pepper until well combined.
  4. Top Brie with Herb Mixture: Pour the garlic and herb mixture evenly over the surface of the Brie, spreading it out with a spoon to cover the top completely.
  5. Bake Brie: Transfer the Brie to the preheated oven and bake for 15–20 minutes until the cheese is warmed through and the center is soft but still holds its shape.
  6. Optional Honey Drizzle and Final Garnish: Remove the Brie from the oven and if desired, drizzle honey over the top for a touch of sweetness. Sprinkle with freshly chopped parsley to add color and freshness.
  7. Serve: Serve the baked Brie warm alongside crackers or sliced baguette to enjoy as a delicious appetizer.

Notes

  • Use fresh herbs when possible for the best flavor, but dried herbs work well too.
  • Trimming the rind is optional but makes the baked Brie easier to scoop.
  • For a sweeter contrast, the honey drizzle adds a lovely touch but can be omitted for a pure savory bite.
  • Serve immediately after baking for optimal gooey texture and flavor.
  • Leftovers can be stored covered in the refrigerator and gently reheated.
