Ingredients for Roasted Asparagus:
- 1 bunch Asparagus
- 2 tbsp Extra Virgin Olive Oil
- Sea Salt and Black Pepper

- 1 bunch Baby Carrots (or 3 large carrots)
- 2 tbsp Extra Virgin Olive Oil
- Sea Salt and Black Pepper
- Preheat the oven: Preheat the oven to 425ºF/210ºC.
- Prepare the carrots and asparagus: Halve the baby carrots or cut the large carrots into long thin pieces. Trim the woody ends of the asparagus.
- Season and roast the carrots: Toss the carrots with olive oil, salt, and pepper on a sheet pan. Roast for 5 minutes.
- Add asparagus: Add the asparagus to the pan with the carrots. Toss together and spread out in a single layer.
- Roast: Roast for 10-15 minutes until vegetables are tender.
