  • 2 tablespoons olive oil
  • 1 medium brown onion, coarsely chopped
  • 2 celery stalks, coarsely chopped
  • 3 medium carrots, peeled and sliced
  • 350g button chestnut mushrooms
  • 3/4 tablespoon fresh rosemary, chopped
  • 1/2 tablespoon fresh thyme leaves
  • 2 garlic cloves, finely minced or pressed
  • 1 heaping tablespoon tomato paste
  • 1 tablespoon soy sauce
  • 1 teaspoon Henderson’s relish or vegan Worcestershire sauce
  • 35g plain flour
  • 160 ml red wine (Malbec)
  • 2 medium parsnips, peeled and sliced
  • 250g swede, peeled and chopped
  • 800 ml vegetable stock
  • 2 dried bay leaves
  • 1/2 teaspoon sea salt
  • 1/2 teaspoon freshly ground black pepper

Instructions

  1. Sauté the Onions, Celery, and Carrots: Heat olive oil in a large pot. Cook onion and celery with a pinch of salt for 10 minutes. Add carrots and cook for another 10 minutes.
  2. Add and Cook the Mushrooms and Aromatics: Increase heat, add mushrooms, garlic, rosemary, and thyme. Cook for 5 minutes.
  3. Incorporate the Flavor Base: Add tomato paste, soy sauce, and Worcestershire sauce. Cook for 1 minute.
  4. Thicken the Mixture: Stir in flour, then add wine to create a thick sauce.
  5. Add Root Vegetables and Stock: Add parsnips, swede, stock, salt, pepper, and bay leaves. Simmer for 45-50 minutes.
  6. Final Adjustments and Serve: Check seasoning, remove bay leaves, and serve.
