A hearty and flavorful Pierogi Dill Soup recipe that combines the comforting flavors of cheese and potato pierogi with savory kielbasa, vegetables, and fragrant dill in a delicious broth.

For the Soup:

  • 1 tbsp vegetable oil
  • 11 ounces kielbasa, sliced
  • 1 yellow onion, diced
  • 2 carrots, peeled and cut into half-moons
  • 1 garlic clove, minced
  • 1 tsp sweet paprika
  • 1 tsp ground cumin
  • 5 cups chicken broth
  • ¼ head savoy cabbage, cored and chopped

Additional Ingredients:

  • 3 tbsp cheese spread, at room temperature
  • 12 pierogi, cheese and potato filling (adjust amount to preference)
  • 3 tbsp chopped fresh dill
  • Freshly ground black pepper, to taste

Instructions

  1. Prep: Slice the kielbasa, cut the carrots, mince the garlic, dice the onion, chop the cabbage, and dill.
  2. Browning: Heat oil in a large pot, brown the kielbasa for about 5 minutes, then remove from pot.
  3. Simmering: Sauté garlic, onion, and carrots. Add paprika, cumin, broth, cabbage. Simmer covered for 10 minutes.
  4. Boiling: Stir in cheese spread, add pierogi. Boil until pierogi float (3-8 minutes).
  5. Stirring: Turn off heat, stir in kielbasa, dill, and black pepper. Serve hot.
