  • 3 Tbsp neutral oil, such as avocado oil
  • 1 medium white or yellow onion, chopped
  • 4 cloves garlic, minced
  • 3 Tbsp all-purpose flour (or gluten-free flour)
  • 2 cups vegetable broth
  • 7 ounces lasagna noodles (or gluten-free noodles)
  • 1 cup cooked white beans
  • 2 cups unsweetened dairy-free milk, such as soy milk
  • 1 8-ounce package white mushrooms, chopped or sliced
  • 2 Tbsp nutritional yeast
  • 1 1/2 Tbsp Italian seasoning
  • 1 tsp salt
  • 1 tsp pepper
  • 1/2 tsp garlic powder (optional)

Instructions

  1. Saute Onion and Garlic: Heat a large pot over medium heat. Add the oil, onion, and cook until soft, about 4 minutes. Add garlic and cook for 2 more minutes.
  2. Add Flour and Broth: Stir in the flour, then pour in the vegetable broth, stirring to combine.
  3. Cook Noodles: Break lasagna noodles into bite-sized pieces and add to the pot. Pour in the milk, Italian seasoning, salt, pepper, and garlic powder. Cook until noodles are tender, about 7-8 minutes.
  4. Finish Dish: Add mushrooms, beans, and nutritional yeast. Cook for an additional 3-4 minutes until mushrooms are soft. Adjust seasoning to taste.
  5. Serve: Remove from heat, divide into bowls, and garnish with parsley or crushed red pepper. Enjoy!
