Cookie Dough
- 10 tablespoons (141g) unsalted butter, softened
- ¾ cup (170g) light brown sugar, packed
- 2 teaspoons pure vanilla extract
- 1 large egg
- 1⅓ cup (165g) all purpose flour
- 1 cup (80g) old fashioned rolled oats
- ½ teaspoon baking soda
- ¼ teaspoon salt
Filling and Topping
- ⅔ cup Nutella (chocolate hazelnut spread)
- ½ cup semisweet chocolate chips
- Preheat Oven and Prepare Pan: Preheat your oven to 350°F (175°C). Line an 8×8 inch square baking pan with foil or parchment paper and spray lightly with nonstick spray. Set aside to prepare the dough.
- Mix Wet Ingredients: In a mixing bowl, use a hand mixer or stand mixer fitted with the paddle attachment to cream together the softened butter and brown sugar until fully combined and fluffy. Beat in the vanilla extract and egg, periodically scraping down the sides and bottom of the bowl to ensure even mixing.
- Add Dry Ingredients: Add the all-purpose flour, rolled oats, baking soda, and salt to the wet mixture. Beat on low speed until all ingredients are just combined into a dough.
- Prepare Base Layer: Reserve a portion of the dough for the topping by putting it in the refrigerator. Take a bit more than half of the dough and press it evenly into the bottom of the prepared baking pan using moistened fingertips to create a flat layer.
- Bake Base Layer: Bake this cookie dough base in the preheated oven for 12 minutes to partially set the crust.
- Add Nutella and Chocolate Chips: Remove the pan from the oven and immediately dollop the Nutella over the warm crust. Use an offset spatula to gently spread the Nutella into an even layer, being careful not to disturb the warm cookie base. Sprinkle the Nutella layer evenly with the semisweet chocolate chips.
- Top with Remaining Dough: Remove the reserved dough from the refrigerator and press it into flat, irregular-shaped pieces. Distribute these pieces evenly over the Nutella and chocolate chips layer to create a rustic topping.
- Final Bake: Return the pan to the oven and bake for an additional 18-22 minutes until the topping is golden brown and fully baked.
- Cool and Serve: Let the bars cool in the pan on a wire rack. Allow them to cool completely or slightly warm before cutting so the filling sets and chocolate does not ooze out. Optionally, add a few chocolate chips on top after baking for extra decoration and chocolate richness.
Notes
- Moistening your fingertips with water helps press the dough evenly without sticking.
- Do not cut the bars while hot to prevent the Nutella filling from oozing out.
- Serve slightly warm for a perfect balance of firm yet melty chocolate center.
- You can line your baking pan with parchment or foil for easier removal and cleanup.
- Use old fashioned rolled oats, not quick oats, for best texture results.
