Ingredients

Scale

Pasta

  • 8 ounces linguine pasta

Shrimp and Sauce

  • 2 tablespoons olive oil
  • 6 tablespoons butter, divided
  • 4 cloves garlic, minced
  • 1 teaspoon red pepper flakes
  • 1 ¼ pound large shrimp
  • Salt and pepper to taste
  • 1 teaspoon Italian seasoning
  • 4 cups baby spinach
  • ½ cup parmesan cheese
  • 2 tablespoons parsley, chopped
  • 1 tablespoon lemon juice

Instructions

  1. Cook Pasta: In a large pot, bring water to a boil and cook the linguine pasta according to the package directions until al dente. Drain the pasta and set it aside.
  2. Sauté Garlic and Red Pepper Flakes: Using the same pot, heat olive oil and 2 tablespoons of the butter over medium heat. Add the minced garlic and red pepper flakes and cook for about 1-2 minutes until fragrant.
  3. Cook Shrimp and Spinach: Add the shrimp to the pot and season with salt and pepper. Cook the shrimp until they begin to turn pink, about 2-3 minutes per side. Stir in the Italian seasoning and add the baby spinach. Cook until the spinach is wilted, about 2 minutes.
  4. Combine Pasta and Sauce: Return the cooked pasta to the pot. Add the remaining 4 tablespoons of butter, parmesan cheese, and chopped parsley. Stir thoroughly until the butter melts and the ingredients are well combined.
  5. Finish with Lemon Juice: Drizzle the lemon juice over the pasta and toss everything to combine. Serve immediately for best flavor and texture.

Notes

  • You can substitute linguine with spaghetti or fettuccine if preferred.
  • Adjust red pepper flakes according to your desired spice level.
  • For a creamier sauce, add a splash of heavy cream when adding butter and parmesan.
  • Make sure not to overcook the shrimp to keep them tender.
