Ingredients

Scale

Meat Mixture

  • 16 ounces ground beef
  • 1/2 medium onion, sliced
  • 1 bell pepper, sliced
  • 1 tsp Worcestershire sauce
  • Salt and pepper to taste

Cheese Circles

  • 2 cups Monterey Jack cheese, shredded
  • 4 ounces cream cheese

Instructions

  1. Prepare Your Oven: Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper to prevent sticking and make cleaning easier.
  2. Cook the Beef Mixture: Heat a skillet over medium-high heat. Add ground beef and break apart with a spatula. When beef begins to brown, add sliced onions and bell peppers. Cook until beef is fully browned and vegetables are softened, about 5-7 minutes. Drain excess grease to avoid soggy roll-ups.
  3. Season and Add Cheese: Return skillet to medium heat. Stir in Worcestershire sauce, salt, and pepper. Add cream cheese and stir continuously until melted and well incorporated. Remove from heat and set aside.
  4. Create Cheese Circles: On the prepared baking sheet, place 8 evenly spaced circles of shredded Monterey Jack cheese, about 1/4 cup per circle. Leave at least 2 inches between circles to allow for spreading. Bake in the preheated oven for 8-10 minutes until edges are golden brown and cheese looks like lace.
  5. Assemble the Roll-Ups: Remove cheese circles from oven and allow to cool about 1 minute until pliable but not hot. Quickly place about 2 tablespoons of the beef mixture on each cheese circle. Roll or fold the cheese around the filling to form roll-ups. Let cool 2-3 minutes until shape sets and cheese hardens.

Notes

  • Slice onions and bell peppers ahead of time to save prep time.
  • Drain grease thoroughly to keep roll-ups from getting soggy.
  • Work quickly when assembling the cheese roll-ups while cheese is still flexible.
  • Use parchment paper on the baking sheet to prevent sticking and ease cleanup.
  • Can be served as a snack, appetizer, or low-carb meal.
