Meat Mixture
- 16 ounces ground beef
- 1/2 medium onion, sliced
- 1 bell pepper, sliced
- 1 tsp Worcestershire sauce
- Salt and pepper to taste
Cheese Circles
- 2 cups Monterey Jack cheese, shredded
- 4 ounces cream cheese
- Prepare Your Oven: Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper to prevent sticking and make cleaning easier.
- Cook the Beef Mixture: Heat a skillet over medium-high heat. Add ground beef and break apart with a spatula. When beef begins to brown, add sliced onions and bell peppers. Cook until beef is fully browned and vegetables are softened, about 5-7 minutes. Drain excess grease to avoid soggy roll-ups.
- Season and Add Cheese: Return skillet to medium heat. Stir in Worcestershire sauce, salt, and pepper. Add cream cheese and stir continuously until melted and well incorporated. Remove from heat and set aside.
- Create Cheese Circles: On the prepared baking sheet, place 8 evenly spaced circles of shredded Monterey Jack cheese, about 1/4 cup per circle. Leave at least 2 inches between circles to allow for spreading. Bake in the preheated oven for 8-10 minutes until edges are golden brown and cheese looks like lace.
- Assemble the Roll-Ups: Remove cheese circles from oven and allow to cool about 1 minute until pliable but not hot. Quickly place about 2 tablespoons of the beef mixture on each cheese circle. Roll or fold the cheese around the filling to form roll-ups. Let cool 2-3 minutes until shape sets and cheese hardens.
Notes
- Slice onions and bell peppers ahead of time to save prep time.
- Drain grease thoroughly to keep roll-ups from getting soggy.
- Work quickly when assembling the cheese roll-ups while cheese is still flexible.
- Use parchment paper on the baking sheet to prevent sticking and ease cleanup.
- Can be served as a snack, appetizer, or low-carb meal.
