For the Dumpling Filling:

  • 14 oz or 3 1/4 cups ground pork
  • 1 egg
  • 2 small coriander roots
  • 2 tsp black peppercorns
  • 2 cloves garlic
  • 1/4 cup carrots, finely diced
  • 2 tbsp green onions, finely chopped
  • 2 dried shiitake mushrooms, soaked and finely chopped
  • 3 tbsp golden mountain sauce
  • 1 1/2 tbsp white sugar
  • 2 1/2 tbsp oyster sauce
  • 1 tbsp cornstarch

Additional Ingredients:

  • 1 pack dumpling wrappers
  • 1 1/2 tablespoon sesame oil
  • garlic oil, for brushing the wontons
  • crispy fried garlic, for garnishing

Instructions

  1. Prepare Spice Mixture: Pound coriander roots, black peppercorns, and garlic in a mortar and pestle.
  2. Mix Sauce: Combine golden mountain sauce, white sugar, sesame oil, and oyster sauce in a bowl.
  3. Blend Filling: Blend ground pork, sauce mixture, egg, and cornstarch until smooth.
  4. Combine Ingredients: Mix the ground filling with crushed spices and diced vegetables.
  5. Shape Dumplings: Place filling on a wrapper, seal edges, and steam for 10 minutes.

Notes

  • You can customize the filling with your favorite ingredients.
