For the Dumpling Filling:
- 14 oz or 3 1/4 cups ground pork
- 1 egg
- 2 small coriander roots
- 2 tsp black peppercorns
- 2 cloves garlic
- 1/4 cup carrots, finely diced
- 2 tbsp green onions, finely chopped
- 2 dried shiitake mushrooms, soaked and finely chopped
- 3 tbsp golden mountain sauce
- 1 1/2 tbsp white sugar
- 2 1/2 tbsp oyster sauce
- 1 tbsp cornstarch
Additional Ingredients:
- 1 pack dumpling wrappers
- 1 1/2 tablespoon sesame oil
- garlic oil, for brushing the wontons
- crispy fried garlic, for garnishing
- Prepare Spice Mixture: Pound coriander roots, black peppercorns, and garlic in a mortar and pestle.
- Mix Sauce: Combine golden mountain sauce, white sugar, sesame oil, and oyster sauce in a bowl.
- Blend Filling: Blend ground pork, sauce mixture, egg, and cornstarch until smooth.
- Combine Ingredients: Mix the ground filling with crushed spices and diced vegetables.
- Shape Dumplings: Place filling on a wrapper, seal edges, and steam for 10 minutes.
