Ingredients

Scale

Eggs and Dairy

  • 8 large eggs
  • 1 cup mayonnaise
  • 1 cup shredded sharp cheddar cheese

Seasonings

  • 2 teaspoons Dijon mustard
  • 1 teaspoon hot sauce (optional, adjust to taste)
  • 1 teaspoon paprika plus extra for garnish
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and black pepper to taste

Additional Ingredients

  • 2 green onions, finely chopped
  • Crackers, chips, or toasted bread slices for serving

Instructions

  1. Cook the Eggs: Place the eggs in a saucepan, cover with cold water, and bring to a boil. Once boiling, turn off the heat, cover the pan, and let the eggs sit for 10 to 12 minutes. Drain the hot water, cool the eggs under cold running water, peel the shells off, and chop the eggs into small pieces.
  2. Mix the Base: In a medium mixing bowl, combine the mayonnaise, Dijon mustard, hot sauce (if using), paprika, garlic powder, onion powder, salt, and black pepper. Stir well until the mixture is smooth and well blended.
  3. Combine Eggs and Seasoning: Add the chopped eggs into the seasoned mayonnaise mixture and stir gently until the eggs are fully coated with the mixture.
  4. Add Cheese: Fold in the shredded sharp cheddar cheese into the egg mixture, mixing until evenly distributed.
  5. Bake the Dip: Preheat your oven to 350°F (175°C). Lightly grease a baking dish and spread the egg mixture evenly in the dish. Bake uncovered for 15 to 20 minutes, or until the dip is hot and bubbly on top.
  6. Garnish and Serve:  finely chopped green onions, and a pinch of paprika over the top of the baked dip. Serve the warm dip immediately with crackers, chips, or toasted bread slices for dipping.

Notes

  • Adjust hot sauce quantity or omit it based on your spice preference.
  • You can prepare the egg mixture ahead of time and refrigerate before baking; just add a few extra minutes to the bake time if starting from cold.
  • This dip is best served warm but can be gently reheated if needed.
  • To make it gluten-free, serve with gluten-free crackers or veggies instead of bread or chips that may contain gluten.
