Ingredients

Scale

Wet Ingredients

  • 1 cup warm milk (240 ml)
  • 1/4 cup warm water (60 ml)
  • 1/4 cup honey (60 ml)
  • 1/4 cup melted butter (60 ml)

Dry Ingredients

  • 1 cup rolled oats
  • 2 teaspoons active dry yeast
  • 3 cups all-purpose flour (375 g)
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt

Instructions

  1. Soften oats: In a small bowl, combine 1 cup of rolled oats with 1 cup (240 ml) of warm milk. Let it sit for 10 minutes so the oats soften and absorb the milk, which will help add moisture and texture to the bread.
  2. Activate yeast: In a separate bowl, dissolve 2 teaspoons of active dry yeast in 1/4 cup (60 ml) of warm water. Add 1 tablespoon of honey (from the total honey amount) and let it sit for 5-10 minutes until the mixture becomes bubbly, indicating the yeast is active and ready for use.
  3. Mix wet ingredients: Add the softened oat mixture, 1/4 cup (60 ml) melted butter, and the remaining honey to the yeast mixture. Stir until well combined to form a flavorful base for the dough.
  4. Add dry ingredients: Gradually mix in 3 cups (375 g) all-purpose flour, 1 teaspoon ground cinnamon, and 1/2 teaspoon salt. Stir the ingredients until a shaggy dough forms, ensuring the cinnamon and salt are evenly distributed.
  5. Knead dough: Transfer the dough onto a lightly floured surface and knead for about 8-10 minutes until it becomes smooth and elastic. If the dough is too sticky, add a tablespoon of flour at a time to achieve the proper consistency.
  6. First rise: Place the dough into an oiled bowl, cover it with a damp cloth, and allow it to rise in a warm spot for 1 to 1.5 hours, or until it doubles in size. This fermentation helps develop the bread’s texture and flavor.
  7. Shape and second rise: Punch down the risen dough to release air, shape it into a log, and place it into a greased loaf pan. Cover and let it rise again for 30-40 minutes until it puffs up.
  8. Bake: Preheat the oven to 375°F (190°C). Bake the bread for 30-35 minutes until the crust turns golden brown and it sounds hollow when tapped, indicating it is fully baked.
  9. Cool and serve: Remove the bread from the pan and transfer it to a wire rack. Let it cool completely before slicing to ensure clean cuts and better texture.

Notes

  • Make sure the milk and water are warm but not hot to avoid killing the yeast.
  • Use fresh active dry yeast for the best rise.
  • You can substitute honey with maple syrup for a different sweetness.
  • For a nuttier flavor, toast the oats lightly before soaking.
  • Store the bread in an airtight container; it stays fresh for 3-4 days at room temperature.
