Pancakes
- 1 cup (120g) Bisquick or Pancake Mix
- 1 scoop (31g) Vanilla PEScience Select Protein Powder
- 3/4 cup (180g) Skim Milk or your choice of milk
- 1 tsp Maple Extract (optional)
Eggs
- 4 large Eggs, whisked
- Cooking spray or oil for greasing pans
- Prepare the pancake batter: In a mixing bowl, combine the pancake mix and vanilla protein powder. Add the milk and maple extract, stirring thoroughly until the batter is smooth with no dry ingredients remaining.
- Cook the pancakes: Heat a large skillet or griddle over medium heat and lightly grease with cooking spray. Pour about 2 tablespoons of batter per pancake to form 8 small circles. Cook until the bottoms are golden brown, then flip and cook for another 60 to 90 seconds until fully cooked through. You may need to cook in batches.
- Cook the folded eggs: Whisk each egg in a small bowl. Heat a pan over medium-low heat and spray with cooking spray. Pour in one whisked egg and immediately swirl the pan to spread the egg evenly. When the edges are set (approximately 10 to 15 seconds), use a rubber spatula to carefully fold one half of the egg into the center, then fold the other half over the top creating a rectangle. Next, fold one end of the rectangle into the center, followed by the other to form a compact square. Repeat for all eggs. To save time, you can cook two eggs at once and cut them in half.
