Seasoned Ground Chicken

  • 2 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp dried oregano
  • 1 tsp dried dill
  • 1 tbsp fresh parsley, chopped
  • Juice of 1/2 lemon
  • Salt and pepper to taste (omit pepper for AIP)

To Serve

  • Rice or cauliflower rice

Instructions

  1. Prepare the Greek Salsa: In a medium bowl, combine diced cucumber, diced red onion, sliced kalamata olives, salt, pepper, lemon juice, fresh dill, and parsley. Toss well to combine all the flavors evenly. Cover and refrigerate to chill while preparing other components.
  2. Make the Tzatziki: In a separate bowl, mix coconut yogurt with diced cucumber, fresh dill, garlic powder, salt, and lemon juice. Stir until smooth and well combined. Refrigerate to allow flavors to meld and to chill.
  3. Cook the Ground Chicken: Heat olive oil in a pan over medium heat. Add the ground chicken, breaking it apart with a spatula or wooden spoon. Sprinkle garlic powder, onion powder, dried oregano, dried dill, chopped parsley, salt, and pepper over the chicken. Stir and cook until the chicken is fully cooked through and no longer pink. Add lemon juice while stirring to blend in the fresh flavor. Remove from heat.
  4. Assemble the Bowls: Divide rice or cauliflower rice evenly among four bowls. Top each with a generous portion of the cooked ground chicken. Add spoonfuls of chilled Greek salsa and a large dollop of the creamy dairy-free tzatziki on top.
