Sauce

  • 3/4 cup sweet chili sauce
  • 2 tablespoons light brown sugar
  • 3 tablespoons low-sodium soy sauce
  • 2 tablespoons rice wine vinegar

Noodles & Toppings

  • 9 oz ramen or rice noodles, cooked according to package instructions
  • Sesame seeds for topping
  • Red pepper flakes for topping

Instructions

  1. Cook the chicken and onions: Heat a large skillet over medium-high heat and add sesame oil, swirling to coat the bottom. Add the ground chicken and the white parts of the green onions to the pan. Break up the chicken as it cooks over medium-high heat until the chicken is fully cooked and no longer pink.
  2. Add aromatics: Reduce the heat to medium. Stir in the minced garlic, grated ginger, and the green parts of the green onions. Cook for an additional 2-3 minutes until fragrant and aromatic.
  3. Prepare and combine the sauce: In a small bowl, whisk together the sweet chili sauce, light brown sugar, low-sodium soy sauce, and rice wine vinegar. Add this sauce mixture along with the cooked noodles to the skillet with the chicken. Toss everything together and cook for 3-4 minutes until the noodles are heated through and well coated with the sauce.
