Bread:

  • 6 tablespoons (90 ml) extra-virgin olive oil, divided, plus more as needed
  • 8 slices white country bread, about 1/4 inch thick each

Filling:

  • 5 small oil-packed anchovy fillets, minced (about 1/2 tablespoon)
  • 3/4 pound (340 g) fresh mozzarella, thinly sliced
  • 4 teaspoons (20 ml) homemade or store-bought pesto sauce
  • 4 ounces drained marinated artichoke hearts (140 g; about 2 whole hearts), very thinly sliced
  • 4 very thin slices mortadella (about 2 ounces)

Instructions

  1. Toasting the Bread: In a large skillet, heat 3 tablespoons oil over medium heat. Toast bread slices until browned on both sides, about 3 minutes per side. Transfer to a work surface.
  2. Assembling the Sandwiches: Spread minced anchovy on half the toasts. Layer with mozzarella, pesto, artichokes, and mortadella. Close sandwiches.
  3. Grilling: Transfer sandwiches to a skillet and bake in a preheated 350°F (175°C) oven for about 5 minutes until cheese is melted.
  4. Serving: Serve the sandwiches hot and enjoy!
