Marinade:

  • 1/4 cup olive oil
  • 1/2 cup Greek yogurt (plain)
  • Zest of 1 lemon and juice of all 3
  • 5 cloves garlic, minced or pressed
  • 2 tablespoons dried oregano
  • 1 teaspoon coriander
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • 1/4 teaspoon black pepper

Chicken:

  • 2 lbs. chicken breast

Instructions

  1. Whisk Marinade: In a large mixing bowl, whisk together olive oil, Greek yogurt, lemon zest and juice, garlic, oregano, coriander, onion powder, salt, and pepper.
  2. Marinate Chicken: Coat the chicken breasts in the marinade. Cover and refrigerate for 30 minutes up to 24 hours. Bring the chicken to room temperature for 30 minutes before cooking.
  3. Preheat and Grill: Preheat oven to 400°F. Heat a grill pan over medium-high heat. Sear chicken for 5 minutes on one side, then bake for 15 minutes or until cooked through.
  4. Rest and Serve: Let the chicken rest for 5 minutes before serving.
