Cake:

  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1 cup unsalted butter, softened
  • 2 cups granulated sugar
  • 4 large eggs
  • 1 tsp vanilla extract
  • 2 cups mashed cooked sweet potatoes (about 2 medium)
  • 2 1/2 cups all-purpose flour
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 cup whole milk or buttermilk

Glaze:

  • 1/2 cup unsalted butter
  • 1 cup granulated sugar
  • 1/4 cup water
  • 1 tsp vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour a Bundt pan or 9×13-inch baking dish.
  2. Cream butter and sugar until light and fluffy. Add eggs one at a time, beating well after each addition. Stir in vanilla extract.
  3. Mix in mashed sweet potatoes until fully combined and smooth.
  4. Whisk together dry ingredients in a separate bowl.
  5. Add dry ingredients to wet mixture alternately with milk, mixing just until combined.
  6. Pour batter into prepared pan and bake for 50–60 minutes.
  7. Prepare glaze: Melt butter, sugar, and water in a saucepan. Simmer, then remove from heat and stir in vanilla extract.
  8. Poke holes in warm cake and pour glaze over the top.
  9. Cool before serving.
