These Gochujang Brussels Sprouts are a flavorful twist on a classic side dish. The spicy and slightly sweet Korean chili paste adds a delicious kick to perfectly roasted brussels sprouts.

For the Brussels Sprouts:

  • 8 ounces brussels sprouts
  • 2 Tablespoons olive oil
  • ¼ teaspoon salt
  • ⅛ teaspoon black pepper

For the Gochujang Sauce:

  • 2 Tablespoons gochujang paste
  • 1 Tablespoon soy sauce
  • 2 teaspoons maple syrup
  • ½ lime, juiced

Instructions

  1. Preheat oven to 400 degrees F. Trim and cut the brussels sprouts in half (making sure they stay attached at the bottom) and place in a large bowl with the olive oil, salt, and pepper. Stir to coat the brussels sprouts in the oil and seasonings.
  2. Spread out on a baking sheet and roast for 20 minutes.
  3. While brussels sprouts roast, prepare the Gochujang Sauce. In a large bowl, mix together gochujang, soy sauce, maple syrup, and lime juice.
  4. Add the roasted brussels sprouts to the sauce and stir to coat. Return the coated brussels sprouts back to the sheet pan and roast for an additional 10-12 minutes.
  5. Plate and enjoy!
