Ingredients

Scale

Noodles

  • 8 ounces rice noodles or gluten-free spaghetti

Sauce

  • 2 teaspoons sesame oil
  • 1 tablespoon red curry paste
  • 2 cloves garlic, chopped
  • Pinch of chili flakes (optional)
  • 1/4 cup vegetable broth
  • 3 tablespoons creamy unsalted peanut butter
  • 1/2 cup coconut milk
  • 1 tablespoon coconut sugar
  • 1 tablespoon coconut aminos or tamari
  • Juice of 1/2 a lime

Garnish

  • Fresh cilantro, chopped
  • Green onions, sliced
  • Peanuts and/or sesame seeds

Instructions

  1. Cook rice noodles: Prepare the rice noodles or gluten-free spaghetti according to the package instructions. Once cooked, drain and rinse with cold water to prevent sticking, then set aside.
  2. Make the red curry peanut sauce: Heat the sesame oil in a large skillet over medium heat. Add the red curry paste and cook, stirring frequently, for about 1 minute until fragrant and aromatic. Add the chopped garlic and optional chili flakes, cooking for another minute to develop the flavors.
  3. Add liquids and peanut butter: Pour in the coconut milk, vegetable broth, peanut butter, lime juice, coconut sugar, and coconut aminos or tamari. Whisk everything together to combine smoothly.
  4. Simmer and thicken sauce: Bring the sauce to a simmer, continuing to whisk frequently until it thickens slightly and becomes creamy and rich.
  5. Toss noodles in sauce: Add the cooked noodles into the skillet with the sauce, tossing well to ensure all noodles are evenly coated and warmed through.
  6. Garnish and serve: Remove from heat and top the noodles with fresh cilantro, sliced green onions, and a sprinkle of peanuts and/or sesame seeds. Serve immediately and enjoy!

Notes

  • For a spicier kick, increase the chili flakes or add some fresh sliced chili peppers.
  • Use gluten-free tamari for a gluten-free and soy-free alternative to soy sauce.
  • Adjust the thickness of the sauce by adding more vegetable broth if needed.
  • Peanut butter can be substituted with almond butter for a different nutty flavor.
  • Serve with a side of steamed or stir-fried vegetables for a more complete meal.
