  • 1 teaspoon garlic powder
  • 2 tablespoons roughly chopped shallots
  • 1 tablespoon fresh lemon juice
  • ½ teaspoon salt (more or less to taste, omit if using salted butter)

Chicken

  • 4 medium chicken breasts (or 2 large chicken breasts halved into cutlets, approximately 2 pounds)

Deglazing Liquid

  • 1 cup water (if needed to deglaze skillet)
  • ½ cup dry white wine (or chicken broth)

Instructions

  1. Prepare Garlic Herb Butter: Add all garlic herb butter ingredients to a food processor and process until the mixture is completely smooth and well combined. Set aside the butter mixture at room temperature.
  2. Season Chicken: Thoroughly season the chicken breasts on all sides with salt and freshly cracked black pepper according to your taste preferences. Set aside to rest briefly.
  3. Heat Skillet: Heat a large skillet over medium heat. When the skillet is hot, add the avocado oil and swirl the pan to coat it completely. Keep warming until the oil is hot and shimmering but not smoking.
  4. Sear Chicken – First Side: Place the chicken breasts in the skillet without overcrowding. Sear for 4 minutes on the first side. After 4 minutes, gently check under the chicken for any signs of burning; if burning occurs, flip immediately, or else let cook for an additional minute before flipping.
  5. Cook Chicken – Second Side: Cook the chicken on the other side for another 4 to 5 minutes until the chicken is firm and cooked through. If chicken breasts are thick and not fully cooked after 8 to 10 minutes, cover the skillet with a lid, reduce heat to low, and cook for an additional 2-3 minutes.
  6. Set Chicken Aside: Transfer the cooked chicken to a plate and set aside to rest while preparing the sauce.
  7. Clean Skillet if Needed: If there are burnt spots on the skillet, carefully pour 1 cup of water into the hot skillet. Bring to a boil, then pour out the water to loosen any burnt bits, preparing the pan for the sauce.
  8. Deglaze Skillet: Reduce the heat to low and carefully pour the white wine or chicken broth into the skillet. Use a spatula or whisk to scrape up any browned bits stuck to the pan. Bring the liquid to a low boil, then simmer uncovered until it reduces by half, to about ⅓ cup.
  9. Add Garlic Herb Butter: Stir or whisk the garlic herb butter mixture into the skillet until fully melted and incorporated into the reduced liquid. Return the chicken breasts to the skillet and spoon the sauce over them to coat thoroughly.
  10. Serve: Once the chicken is well coated, immediately remove skillet from heat. Plate the chicken with your choice of sides and spoon additional sauce from the skillet over the top. Serve immediately for best flavor and texture.
