For the base:
- 3 garlic cloves (minced)
- 1 lb uncooked turkey sausage
- 5 cups cubed sweet potatoes (1-inch cubes)
- 1 green bell pepper (diced)
- 1/2 large yellow onion (finely diced)
- 2 tbsp avocado oil (or olive oil)
For the egg mixture:
- 1/2 cup milk (whole milk for richness)
- 10 large eggs
- 1/2 cup grated mozzarella cheese (Sargento brand recommended)
- 1 tsp salt
- 1 tsp dried thyme
- 1/2 tsp pepper
- Preheat Oven and Prepare the Baking Dish: Preheat your oven to 350°F (175°C). While the oven is heating, chop all vegetables and grease a 9×13-inch casserole dish to prevent sticking during baking.
- Cook the Vegetables: Heat avocado oil in a Dutch oven or large saucepan until hot. Add diced onion, green bell pepper, and cubed sweet potatoes. Cook for 8-9 minutes, stirring occasionally, until vegetables begin to soften. Add minced garlic in the last 1-2 minutes and sauté. Remove vegetables and spread evenly in the prepared casserole dish.
- Cook the Sausage: In the same pan, add turkey sausage and sauté until fully cooked, breaking it into small pieces while cooking. Add cooked sausage to the vegetables in the casserole dish and combine well.
- Prepare the Egg Mixture: In a separate bowl, whisk together eggs, whole milk, dried thyme, salt, pepper, and grated mozzarella cheese until smooth and fully combined.
- Combine and Bake: Pour the egg mixture evenly over the sausage and vegetable mixture in the casserole dish. Stir gently to distribute the eggs throughout. Bake in the preheated oven for 40-45 minutes until the center is firm. If the top browns too quickly midway, cover loosely with foil to prevent burning.
- Cool and Serve: Remove the baked casserole from the oven and let it cool for about 15 minutes before serving to allow flavors to meld and to make slicing easier. Serve warm and enjoy.
Notes
- Make sure the sweet potatoes are cut into uniform 1-inch cubes to ensure even cooking.
- If preferred, substitute turkey sausage with chicken sausage or a plant-based sausage for variation.
- Covering the casserole with foil halfway during baking prevents the top from burning while the inside cooks thoroughly.
- You can prepare the base mixture a day ahead and refrigerate to save time in the morning.
- Use whole milk for a richer texture; for a lighter version, use low-fat milk but expect a slightly less creamy result.
