Meatloaf Base
- 1 ½ pounds ground beef
- ½ cup whole milk
- 1 cup breadcrumbs (regular, Italian-style, or panko)
- 1 large egg
- ½ teaspoon salt
- 1 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- ½ teaspoon Adobo seasoning
- 3 tablespoons Worcestershire sauce
Vegetables
- 1 large onion (finely chopped)
- 1 green bell pepper (finely chopped)
- ½ cup mushrooms (chopped)
- 3 cloves garlic (minced)
- 1 tablespoon olive oil
Cheese
- 8 slices VERY thick-cut mozzarella cheese
- Preheat the oven: Preheat your oven to 350°F (175°C). Lightly grease a loaf pan with nonstick spray, butter, or a drizzle of olive oil to prevent sticking.
- Cook the vegetables: In a medium skillet over medium heat, warm the olive oil. Add onions, bell peppers, mushrooms, and minced garlic. Sauté for 5 to 7 minutes until all vegetables are softened and fragrant. Remove from heat and let cool slightly.
- Mix the meatloaf base: In a large bowl, combine ground beef, milk, breadcrumbs, egg, salt, black pepper, garlic powder, onion powder, Adobo seasoning, Worcestershire sauce, and the sautéed vegetables. Mix gently with your hands until just combined; avoid overmixing for a tender meatloaf.
- Assemble the first layer: Place half of the meat mixture into the prepared loaf pan. Press down gently to form an even layer.
- Add the cheese filling: Arrange 4 thick slices of mozzarella evenly over the meat layer.
- Top with remaining meat mixture: Spread the remaining half of the meat mixture over the cheese. Gently press to seal the edges and create a uniform loaf. Reserve the last 4 slices of mozzarella for the topping.
- Bake the meatloaf: Place the loaf pan in the preheated oven and bake for 30 minutes.
- Add the topping: Remove the meatloaf from the oven. Lay the remaining 4 slices of mozzarella cheese over the top. Optionally, sprinkle with chopped parsley for extra color. Return to the oven and bake an additional 10 to 15 minutes until the cheese is melted, bubbly, and slightly crispy on the edges.
- Rest and serve: Let the meatloaf rest in the pan for 5 to 10 minutes to allow juices to redistribute. Slice, serve warm, and enjoy your stuffed Philly cheesesteak meatloaf!
Notes
- Using very thick-cut mozzarella slices ensures gooey, melty cheese pockets throughout the meatloaf.
- You can substitute the Worcestershire sauce with soy sauce for a different umami flavor.
- Letting the meatloaf rest after baking makes slicing easier and juicier.
- For extra flavor, sprinkle chopped parsley or your favorite fresh herbs on top before serving.
- Breadcrumbs can be swapped for gluten-free alternatives if needed.
