Instructions

  1. Combine Ingredients: In a crock pot, add the softened cream cheese, chopped corned beef, freshly grated Swiss cheese, Thousand Island dressing, sour cream, and drained sauerkraut. Stir the mixture well to evenly distribute all ingredients.
  2. Cook the Dip: Cover the crock pot and cook on high for 1 ½ to 2 hours. Stir the dip approximately every 30 minutes to ensure the cheese melts evenly and the mixture heats through.
  3. Finish and Serve: After cooking, stir the dip one final time to combine all flavors thoroughly. Turn off the heat, garnish with chopped parsley, and serve hot with toasted bread, crackers, or fresh vegetables such as cucumbers, carrots, or celery.
