Instructions

  1. Preheat Oven: Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Boil Carrots: Boil carrot rounds in salted water for 10–12 minutes until fork-tender. Drain and cool slightly.
  3. Prepare Carrots: Place carrots on the baking sheet and gently flatten each round with a glass or measuring cup.
  4. Season Carrots: Drizzle with olive oil, sprinkle with garlic powder, smoked paprika, salt, pepper, and grated Parmesan.
  5. Roast Carrots: Roast in the oven for 20–25 minutes, flipping halfway through, until crispy and golden.
