Liquids:

  • 400 milliliters coconut milk
  • 480 milliliters chicken or vegetable broth
  • 1 tablespoon fish sauce
  • Juice of 1 lime
  • Salt, to taste
  • Black pepper, to taste
  • 1 tablespoon olive oil

Garnish:

  • Fresh cilantro, chopped
  • Lime wedges

Instructions

  1. Prepare the Fish – Pat fish fillets dry with paper towel and season both sides with salt and black pepper. Set aside.
  2. Sauté Aromatics – Heat olive oil in a large pot over medium heat. Add diced onion and cook for 3 to 4 minutes until softened. Stir in garlic, ginger, and red curry paste and cook for 1 minute.
