A zesty and flavorful Chipotle Sweet Potato Salad recipe that combines the creaminess of Greek yogurt and mayo with the smokiness of chipotle peppers, balanced with the sweetness of sweet potatoes.

Sweet Potato:

  • 1 lb sweet potato

Smoky Chipotle Aioli:

  • 1/2 cup plain Greek yogurt
  • 1/2 cup all-natural mayo
  • 12 chipotle peppers in adobo
  • 1 tsp Sriracha chili sauce
  • 1 tsp parsley
  • 1 TBSP lemon juice
  • 1/2 tsp garlic powder
  • 1/4 tsp salt

Additional Ingredients:

  • 23 TBSP chopped jalapeno pepper (seeds and membrane removed)
  • 2 TBSP chopped red bell pepper (optional)
  • 1/2 tsp dried or fresh cilantro
  • 1/8 tsp paprika
  • 1/8 tsp salt

Instructions

  1. Whisk together the sauce: Combine Greek yogurt, mayo, chipotle peppers, Sriracha, parsley, lemon juice, garlic powder, and salt in a food processor or blender. Adjust spiciness according to taste.
  2. Clean, peel, and cube the sweet potato.
  3. Boil the sweet potatoes: Boil the cubed sweet potatoes in a pot of water for 6-10 minutes until fork-tender.
  4. Drain the water and toss sweet potatoes with the chipotle aioli.
  5. Stir in the jalapeno and red bell peppers, and season with cilantro, paprika, and salt.
  6. Serve warm or chilled. Enjoy!
