Sweet Potato:
Smoky Chipotle Aioli:
- 1/2 cup plain Greek yogurt
- 1/2 cup all-natural mayo
- 1–2 chipotle peppers in adobo
- 1 tsp Sriracha chili sauce
- 1 tsp parsley
- 1 TBSP lemon juice
- 1/2 tsp garlic powder
- 1/4 tsp salt
Additional Ingredients:
- 2–3 TBSP chopped jalapeno pepper (seeds and membrane removed)
- 2 TBSP chopped red bell pepper (optional)
- 1/2 tsp dried or fresh cilantro
- 1/8 tsp paprika
- 1/8 tsp salt
- Whisk together the sauce: Combine Greek yogurt, mayo, chipotle peppers, Sriracha, parsley, lemon juice, garlic powder, and salt in a food processor or blender. Adjust spiciness according to taste.
- Clean, peel, and cube the sweet potato.
- Boil the sweet potatoes: Boil the cubed sweet potatoes in a pot of water for 6-10 minutes until fork-tender.
- Drain the water and toss sweet potatoes with the chipotle aioli.
- Stir in the jalapeno and red bell peppers, and season with cilantro, paprika, and salt.
- Serve warm or chilled. Enjoy!
