CHICKEN

  • 8 bone-in chicken thighs and drumsticks combined, skin removed
  • 1/4 cup flour
  • 1 tsp salt

  • 1 tsp onion powder
  • 1/2 tsp pepper
  • 1/2 tsp paprika
  • 2 tablespoons olive oil
  • 1 tablespoon unsalted butter

FRICASSEE

  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 8 ounces pearl onions, peeled and kept whole
  • 2 carrots, cut into ¾-inch pieces
  • 3 stalks celery, cut into ¾-inch pieces
  • 8 ounces white mushrooms, quartered (halved if small)
  • 4 cloves garlic, minced
  • 1/4 teaspoon red pepper flakes
  • 2 1/2 cups reduced sodium chicken broth
  • 1 teaspoon dried parsley
  • 1/2 tsp dried oregano
  • 1/2 tsp dried basil

ADD LATER

  • 1/2 cup heavy cream
  • 1 1/2 tablespoons chopped fresh parsley
  • 1 1/2 teaspoons fresh thyme leaves
  • 1/2 tablespoon lemon juice
  • 1/81/4 tsp salt
  • 1/81/4 tsp pepper

Instructions

  1. Preheat oven: Preheat oven to 350°F.
  2. Dredge chicken: Mix flour and seasonings. Dredge chicken, then brown in butter/oil.
  3. Cook vegetables: Sauté onions, carrots, celery, mushrooms. Add garlic and red pepper flakes.
  4. Add flour: Sprinkle flour over vegetables and cook.
  5. Add broth: Pour in chicken broth, add herbs. Return chicken to the pan.
  6. Bake: Cover and bake for 25-35 minutes.
  7. Finish sauce: Stir in cream, herbs, lemon juice. Simmer until thickened.
  8. Serve: Serve chicken over rice or mashed potatoes.
