Lasagna Rolls
- 12 lasagna noodles, cooked and cooled
- 2 cups cooked chicken, shredded
- 1 jar (15 oz) Alfredo sauce
Cheese Mixture
- 1 cup ricotta cheese
- 1 cup mozzarella cheese, shredded (divided)
- 1/2 cup grated Parmesan cheese
- 1 egg, beaten
Seasonings & Garnish
- 1 teaspoon garlic powder
- 1 teaspoon Italian seasoning
- Fresh parsley, chopped for garnish
- Preheat and Prepare: Preheat your oven to 375°F (190°C) and grease a baking dish to prevent the rolls from sticking during baking.
- Mix Filling: In a medium bowl, combine the ricotta cheese, half of the shredded mozzarella, grated Parmesan, beaten egg, garlic powder, and Italian seasoning. Stir thoroughly to create a smooth, well-blended cheese mixture.
- Assemble Rolls: Lay each cooked lasagna noodle flat and spread a layer of the ricotta cheese mixture evenly over it. Top with a generous amount of shredded chicken, then drizzle some Alfredo sauce over the filling. Carefully roll up each noodle tightly and place the rolls seam side down in the prepared baking dish.
- Add Sauce and Cheese: Pour the remaining Alfredo sauce evenly over the arranged rolls in the dish. Sprinkle the leftover shredded mozzarella cheese on top to add a golden, melted topping.
- Bake Covered: Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes to heat through and blend flavors. Then, remove the foil and bake for an additional 5 to 10 minutes or until the cheese on top is bubbly and golden brown.
- Garnish and Serve: After baking, sprinkle freshly chopped parsley over the top of the lasagna rolls for a fresh, herbaceous finish. Serve warm for a comforting meal.
Notes
- Be sure to cook the lasagna noodles just until al dente to avoid them becoming too soft during baking.
- You can substitute the cooked chicken with rotisserie chicken for convenience.
- If preferred, add some spinach or mushrooms to the filling for extra vegetables.
- Covering the dish while baking keeps the rolls moist and prevents the cheese from drying out.
- Use fresh parsley or basil for garnish depending on your preference.
