Marinade:

  • 1 large clove garlic, put through a garlic press or minced and mashed
  • 1/4 teaspoon Chinese five-spice powder
  • 2 tablespoons honey, preferably amber colored
  • 2 brimming tablespoons hoisin sauce
  • 1 1/2 tablespoons soy sauce
  • 1 tablespoon ketchup
  • 2 scant teaspoons toasted sesame oil

Chicken:

  • 1 3/4 pounds boneless, skinless chicken thighs (see recipe note)

Instructions

  1. Marinate the chicken: In a large bowl, combine garlic, five-spice powder, honey, hoisin sauce, soy sauce, ketchup, and sesame oil. Reserve 3 tablespoons of the marinade for later. Add the chicken to the bowl, coat well, and marinate for 30 minutes at room temperature or up to 24 hours in the refrigerator.
  2. Grill the chicken: Oil a grill pan over medium-high heat. Remove chicken from the marinade, shake off excess, and grill for 6 to 10 minutes, turning occasionally. Baste with reserved marinade during the last 2 minutes of cooking.
  3. Serve: Rest the chicken for 5 to 10 minutes before serving.

  • You can adjust the sweetness or saltiness of the marinade to suit your taste preferences.
