These Cannoli Bites are a delightful and easy-to-make dessert that captures the essence of traditional cannoli in bite-sized form. Using a premade pie crust, creamy mascarpone and ricotta filling, and mini chocolate chips, these treats are perfect for parties or an indulgent snack.

Ingredients

Scale

Crust

  • 1 premade pie crust

Filling

  • 1/2 cup whole milk ricotta cheese, strained
  • 1/4 cup mascarpone cheese
  • 1/2 tsp vanilla extract
  • 1/3 cup powdered sugar
  • 1/3 cup mini chocolate chips, plus more for topping

Instructions

  1. Preheat and prepare pie crust: Preheat your oven to 400°F (204°C). Unroll the pie crust on a lightly floured surface or cutting board. Use a 2 ½ inch round biscuit cutter, cookie cutter, or a cup to cut out 12 rounds of dough. Place these rounds into an ungreased mini muffin tin and press gently with your fingers to fit the dough into the cups.
  2. Bake the crust cups: Bake the dough cups for 10-12 minutes or until they turn a light golden brown. Remove from the oven and allow them to cool for 15 minutes, so they crisp up and are easy to handle.
  3. Prepare the filling: In a medium mixing bowl, combine the strained ricotta cheese, mascarpone cheese, powdered sugar, vanilla extract, and mini chocolate chips. Mix thoroughly until smooth and well incorporated.
  4. Fill the cups: Spoon the ricotta filling into the cooled pie crust cups. For a neater presentation, transfer the filling into a large zip-lock bag, cut off a corner or use a pastry bag with a star tip, and pipe the filling into each cup. Once filled, sprinkle additional mini chocolate chips on top and optionally dust with extra powdered sugar.
  5. Serve and enjoy: Serve these cannoli bites immediately or refrigerate briefly for a firmer filling. Enjoy these delightful mini desserts with friends and family!

Notes

  • Straining the ricotta cheese helps reduce moisture for a thicker filling.
  • You can prepare the pie crust cups ahead of time and keep them in an airtight container.
  • Use a pastry bag for professional-looking piping, but spooning works perfectly as well.
  • Store leftovers covered in the refrigerator for up to 2 days. Best enjoyed fresh.
  • For a different twist, add chopped pistachios or orange zest to the filling.
