Instructions

  1. Preheat and Prepare: Preheat your oven to 450°F (232°C). Spray a 12-cup capacity bundt pan generously with cooking spray to prevent sticking, then set it aside.
  2. Cook the Beef Mixture: In a large skillet over medium-high heat, add the ground beef, diced yellow onion, salt, and black pepper. Cook for 6 to 7 minutes, stirring occasionally, until the beef is fully browned with no pink remaining. Drain any excess fat from the skillet.
  3. Season the Meat: Return the skillet to medium heat and stir in the ¼ cup of water along with the 2 tablespoons of taco seasoning. Cook for an additional 2 to 3 minutes, allowing the liquid to mostly evaporate and the flavors to meld. Remove the skillet from heat.
  4. Layer Ingredients in Bundt Pan – First Layer: Start by layering half of the shredded Colby jack cheese evenly across the bottom of the prepared bundt pan. Next, add half of the cooked ground beef mixture over the cheese, then scatter one-third of the tortilla chips on top. Avoid packing the chips too tightly to allow for crispiness.
  5. Layer Ingredients in Bundt Pan – Second Layer: Repeat the layering by adding the remaining shredded cheese, followed by the rest of the ground beef, and then another one-third of the tortilla chips. Spread out the chips evenly to create a uniform layer without overfilling the bundt pan.
  6. Bake: Place the filled bundt pan into the preheated oven and bake for 10 minutes. This allows the cheese to melt thoroughly and the ingredients to heat through.
  7. Invert and Serve: Remove the bundt pan carefully from the oven. Place a large, heatproof plate on top of the bundt pan, then invert the pan so the nachos transfer onto the plate in a ring shape. Gently lift off the bundt pan, and if any cheese sticks to the pan, replace it back on the nachos.
