Instructions

  1. Prepare the bruschetta topping: In a medium bowl, combine the diced Roma tomatoes, minced garlic, olive oil, balsamic vinegar, chopped fresh basil, salt, and cracked black pepper. Stir gently and set aside. If the tomatoes release too much liquid, you may gently drain some of the excess after a few minutes.
  2. Season the chicken: Generously season both sides of the chicken breasts with salt and pepper to taste.
  3. Cook chicken on stovetop: Heat 2 teaspoons of oil in a skillet over medium heat. Add the chicken breasts carefully, avoiding overcrowding. Cook the first side undisturbed for 8 minutes to develop a nice sear. Flip the chicken and cook the second side for another 2 to 4 minutes, until the internal temperature reaches 161-162ºF and chicken is cooked through. Transfer chicken to a plate and allow it to rest for 5 minutes.
  4. Alternative grilling method: Preheat your grill to medium-high heat (375-400ºF). Lightly brush the grill grates with avocado or vegetable oil. Grill the chicken breasts for about 8 to 10 minutes per side until fully cooked and juices run clear. Remove and let rest 5 minutes.
  5. Serve the dish: After resting, place the chicken breasts on serving plates. Generously spoon the bruschetta mixture over each chicken breast and garnish with additional fresh basil if desired. Serve immediately for best flavor.
