Filling
- 1 cup Medjool dates (about 13 dates)
- 1/3 cup sunflower seed butter
- 1 tsp vanilla extract
- 1/3 cup protein powder (choose your favorite type)
- 1/4 cup cocoa powder
- Pinch of salt
Chocolate Coating
- 1/2 cup dark chocolate
- 1/2 tsp coconut oil
- Soften the Dates: Remove the pits from your Medjool dates and soak them in hot water for 5 minutes to soften. This step makes them easier to blend and gives your filling a chewier texture.
- Blend the Base: Drain the water from the soaked dates, then place them in your food processor along with the sunflower seed butter and vanilla extract. Blend the mixture until it looks like a thick, sticky caramel.
- Add Remaining Ingredients: Add the protein powder, cocoa powder, and a pinch of salt to the food processor. Blend again until all ingredients are well combined and form a dough. Scrape down the sides as needed for even mixing.
- Form the Bites: Scoop the dough and roll it into balls approximately one tablespoon in size each.
- Chill the Bites (Optional): You can enjoy the protein balls as they are, or chill them for a firmer texture. To chill, place the balls on a lined baking sheet and freeze for at least 30 minutes.
- Melt the Chocolate: Combine the dark chocolate and coconut oil in a small microwavable dish. Melt on high heat in 20-30 second intervals, stirring in between to ensure smooth melting.
- Coat the Bites: Dip each chilled ball into the melted chocolate, making sure it is fully coated. Place the coated bites back on the lined baking sheet to set the chocolate before serving.
