These Blueberry Blondies combine a rich, buttery base with bursts of fresh blueberries for a delightful twist on a classic treat. White chocolate chips add a creamy sweetness, making these bars perfect for dessert or a special snack.

Ingredients

Scale

Wet Ingredients

  • ½ cup unsalted butter
  • ½ teaspoon vanilla extract
  • 2 eggs

Dry Ingredients

  • 1 cup granulated sugar
  • 1 cup all-purpose flour
  • ½ teaspoon salt

Other

  • ½ cup white chocolate chips
  • ½ cup blueberries (fresh, washed and dried)

Instructions

  1. Melt Butter and White Chocolate: Melt the unsalted butter in a saucepan over medium heat. Once melted, pour the hot butter over the white chocolate chips in a separate bowl. Let it rest for 5 minutes, then whisk until fully incorporated. Allow the mixture to cool and thicken for about 30 minutes.
  2. Prepare Oven and Pan: Preheat the oven to 350 °F (177 °C) and position the oven rack in the center. Line an 8×8 inch baking pan with parchment paper and spray it lightly with non-stick cooking spray.
  3. Mix Sugar and Wet Ingredients: In a separate bowl, combine the butter and white chocolate mixture with the granulated sugar. Whisk thoroughly for one to two minutes until the sugar begins to absorb and the mixture is smooth.
  4. Add Vanilla and Eggs: Stir in the vanilla extract, then add the eggs. Whisk well until the batter is smooth and homogenous.
  5. Add Dry Ingredients: Sprinkle in the flour and salt. Using a silicone spatula, gently fold the ingredients together a few times until the batter comes together without overmixing.
  6. Incorporate Blueberries: Carefully fold in the fresh blueberries to avoid crushing them. Ensure they are evenly distributed throughout the batter.
  7. Bake: Pour the batter into the prepared baking pan, spreading it evenly. Bake for 35 to 45 minutes until the edges and top are caramelized and brown. Test doneness by inserting a toothpick in the center; it should come out with few crumbs or clean.
  8. Cool and Serve: Let the blondies cool to room temperature in the pan. Once cooled, remove from the pan using the parchment paper and cut into 12 to 16 slices before serving.

Notes

  • Be careful not to overmix the batter after adding the blueberries to prevent them from breaking and turning the batter blue.
  • Use fresh, firm blueberries for the best texture and flavor.
  • If you don’t have parchment paper, grease the pan thoroughly to prevent sticking.
  • The blondies are best enjoyed the same day but can be stored in an airtight container at room temperature for up to 3 days.
  • You can substitute white chocolate chips with milk or dark chocolate chips as an option, but it will alter the sweetness profile.
