Ingredients

Scale

Main Ingredients

  • 1 1/2 cups cooked rice (preferably day-old)
  • 1 chicken breast, diced
  • 2 eggs, beaten
  • 1/2 cup diced carrots
  • 1/3 cup green peas
  • 2 cloves garlic, minced
  • 2 green onions, sliced (for garnish)
  • 2 to 3 tablespoons soy sauce
  • 1 tablespoon oil (plus more as needed)

Bang Bang Sauce

  • 1/4 cup mayonnaise
  • 2 tablespoons sweet chili sauce
  • 1 tablespoon Sriracha (adjust to taste)
  • 1 teaspoon rice vinegar

Instructions

  1. Prepare the Bang Bang Sauce: In a small bowl, combine mayonnaise, sweet chili sauce, Sriracha, and rice vinegar. Mix well and set aside to let the flavors meld.
  2. Cook the Chicken: Heat 1 tablespoon of oil in a large skillet or wok over medium-high heat. Add the diced chicken breast, season with salt and pepper, and cook for 5 to 6 minutes until browned and fully cooked. Remove chicken from the pan and set aside.
  3. Scramble the Eggs: In the same pan, scramble the beaten eggs until just set. Remove the eggs and set aside with the chicken.
  4. Sauté Vegetables: Add another drizzle of oil to the pan. Sauté diced carrots and minced garlic for 2 to 3 minutes until the carrots begin to soften. Stir in the green peas and cook for an additional minute.
  5. Stir-Fry the Rice: Add the cold cooked rice to the pan. Stir-fry over high heat for 3 to 4 minutes, breaking up any clumps and allowing the rice to crisp slightly.
  6. Combine Ingredients: Return the cooked chicken and scrambled eggs to the pan with the rice and vegetables. Stir everything well to combine evenly.
  7. Add Soy Sauce and Bang Bang Sauce: Pour in 2 to 3 tablespoons of soy sauce and mix thoroughly. Then, drizzle the prepared bang bang sauce over the rice mixture, stirring constantly until everything is well coated and heated through.
  8. Garnish and Serve: Remove from heat, garnish with sliced green onions, and serve hot for a spicy, creamy, and savory meal.

Notes

  • For best texture, use day-old rice that has been refrigerated to prevent clumping.
  • Adjust Sriracha quantity in the sauce to control the level of spiciness.
  • Chicken breast can be substituted with shrimp, tofu, or other proteins.
  • Adding more vegetables such as bell peppers or corn can increase the dish’s nutritional value and color.
  • Use low-sodium soy sauce to reduce sodium content if desired.
