Ingredients

Scale

Wet Ingredients

  • 2/3 cup mashed banana
  • 3 tbsp pure maple syrup or honey
  • 2 tbsp oil or water
  • 1/2 tsp pure vanilla extract (optional)

Dry Ingredients

  • 1 cup flour (white, spelt, oat, or Bob’s gluten free all purpose flour)
  • 1 tsp baking powder
  • 1/4 tsp salt

Instructions

  1. Prepare the wet ingredients: In a large bowl, whisk together the mashed banana, maple syrup or honey, oil or water, and vanilla extract until fully combined and smooth.
  2. Preheat and grease pans: Preheat your oven to 350°F (175°C). Grease a donut pan or a mini muffin tin thoroughly to prevent sticking.
  3. Combine dry ingredients: In a separate bowl, stir together the flour, baking powder, and salt until evenly mixed.
  4. Form the batter: Gradually add the dry ingredients into the wet mixture, stirring gently until just combined to form your donut batter. Avoid overmixing to keep the donuts tender.
  5. Fill the pan: Spoon the batter evenly into the prepared donut pan or mini muffin tin, smoothing the tops for even baking.
  6. Bake: Place the pan in the preheated oven and bake for about 8 minutes, or until the donuts have risen and a toothpick inserted into the center comes out mostly clean.
  7. Cool and remove: Allow the donuts to cool in the pan for a few minutes before gently popping them out. Cool completely on a wire rack before serving or icing.
  8. Optional icing: For added flavor, top the cooled donuts with your choice of icing such as cinnamon cream cheese frosting as suggested in the original recipe notes.

Notes

  • You can use white, spelt, oat, or Bob’s gluten free all-purpose flour, but almond or whole wheat flours are not recommended for this recipe as they haven’t been tested.
  • Ensure not to overbake to maintain donut softness; keep an eye around the 8-minute mark.
  • Grease donut pans well to easily remove the baked donuts without breaking.
  • Vanilla extract is optional but adds a nice aroma and depth to the flavor.
  • Feel free to customize with your preferred sweetener, such as honey or maple syrup.
  • The recipe is easily doubled or tripled for larger batches.
