Ingredients

Scale

Brownie Batter

  • ½ cup butter (softened at room temperature)
  • ¾ cup granulated sugar
  • ¾ cup brown sugar
  • 1 cup sour cream
  • 2 eggs (room temperature)
  • 1 ½ teaspoon vanilla extract
  • 2 cups flour
  • 1 ½ teaspoon baking soda
  • ½ teaspoon salt
  • ½ teaspoon cinnamon
  • 4 very ripe bananas (mashed)
  • ¾ cup chopped walnuts

Cream Cheese Frosting

  • 8 ounces cream cheese (softened at room temperature)
  • ½ cup butter (softened at room temperature)
  • 3 cups powdered sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Prep. Preheat the oven to 350°F and grease an 8×8-inch baking dish liberally with baking spray or butter to prevent sticking.
  2. Cream. In the bowl of an electric mixer, cream together the butter and both sugars on high speed until the mixture is fluffy and noticeably lighter in color, about 2-3 minutes.
  3. Add the remaining wet ingredients. Reduce the mixer to medium speed and mix in the sour cream. Then, add the eggs one at a time, mixing well after each addition, followed by the vanilla extract.
  4. Combine the dry ingredients. In a separate bowl, whisk together the flour, baking soda, salt, and cinnamon to evenly distribute the leavening and spices.
  5. Put it all together. Gradually add the dry ingredients to the wet mixture on low speed, mixing until just combined. Fold in the mashed bananas and chopped walnuts gently to maintain texture.
  6. Bake. Spread the batter evenly into the prepared baking dish. Bake in the preheated oven for 25 minutes or until a toothpick inserted in the center comes out clean.
  7. Cool. Remove the brownies from the oven and allow them to cool completely in the pan. Meanwhile, prepare the cream cheese frosting.
  8. Make the cream cheese frosting. Beat the cream cheese and butter together until smooth and creamy. Add the powdered sugar gradually, about one cup at a time, beating well after each addition until smooth. Stir in the vanilla extract.
  9. Frost the brownies. Once the brownies have fully cooled, spread the cream cheese frosting evenly over the top before serving.

Notes

  • Use very ripe bananas for the best sweetness and moisture.
  • Make sure the cream cheese and butter for the frosting are softened to room temperature to ensure a smooth frosting.
  • Do not overmix the batter once the dry ingredients are added to avoid dense brownies.
  • Walnuts can be omitted or substituted with pecans or chocolate chips.
  • Store leftovers covered in the refrigerator for up to 4 days to keep the frosting fresh.
