These Baked Feta Potatoes are a flavorful and satisfying dish that combines the creaminess of feta with crispy roasted potatoes, fragrant herbs, and a hint of citrus. Perfect for a cozy dinner or impressive side dish.

Potatoes:

  • 2 large baking potatoes

Baked Feta:

  • 1 200g block of feta

Seasonings:

  • 2 tbsp olive oil
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • 1 tsp salt
  • 1 tsp black pepper
  • 0.5 tsp red chili flakes

Additional:

  • 1 head of garlic (top cut off)
  • 1 lemon, halved
  • 1 tbsp honey
  • 1/4 cup | 20g fresh basil

Instructions

  1. Preheat Oven: Preheat your oven to 200C | 390F.
  2. Prepare Potatoes: Wash and cube the potatoes. Par-boil for 6-8 minutes, then drain and steam dry for 2-3 minutes.
  3. Season Potatoes: Coat the potatoes with thyme, oregano, salt, pepper, and olive oil in a baking dish.
  4. Roast: Drizzle garlic with oil, wrap in foil, and add to the dish. Roast potatoes and garlic for 30-40 minutes.
  5. Add Feta: Remove from oven, add feta to the middle, squeeze lemon over, and return to oven for 15 minutes.
  6. Prepare Garlic: Squeeze roasted garlic out of skins, mash, and set aside.
  7. Finish Dish: Mix garlic, lemon juice, and basil into potatoes. Drizzle with honey, shredded basil, and chili flakes.
  8. Serve: Serve and enjoy!
