Seasonings:
- 2 tbsp olive oil
- 1 tsp dried thyme
- 1 tsp dried oregano
- 1 tsp salt
- 1 tsp black pepper
- 0.5 tsp red chili flakes
Additional:
- 1 head of garlic (top cut off)
- 1 lemon, halved
- 1 tbsp honey
- 1/4 cup | 20g fresh basil
- Preheat Oven: Preheat your oven to 200C | 390F.
- Prepare Potatoes: Wash and cube the potatoes. Par-boil for 6-8 minutes, then drain and steam dry for 2-3 minutes.
- Season Potatoes: Coat the potatoes with thyme, oregano, salt, pepper, and olive oil in a baking dish.
- Roast: Drizzle garlic with oil, wrap in foil, and add to the dish. Roast potatoes and garlic for 30-40 minutes.
- Add Feta: Remove from oven, add feta to the middle, squeeze lemon over, and return to oven for 15 minutes.
- Prepare Garlic: Squeeze roasted garlic out of skins, mash, and set aside.
- Finish Dish: Mix garlic, lemon juice, and basil into potatoes. Drizzle with honey, shredded basil, and chili flakes.
